You know you've arrived when you walk through the door from the gravel parking lot -- fire nipping at your feet, and lots of smoked meat being pulled directly off the pits.

MAIN FARE:

  • Beef Shoulder is extremely lean, loaded with flavor, very tender.  Excellent.  -- Double Boner
  • Sausage is good with a nice texture and good CenTex flavors.
  • Pork Chop is outstanding!  Melts in your mouth.  -- Assman
  • Prime Rib: Wow!  Lean, tender, and moist with a mild smoky flavor.
  • Prime Rib melts in your mouth, superb texture and flavor.  Excellent.  -- Double Boner

  • This mutton is fall-off-the-bone tender, has a beautiful silky texture, and great flavor.  Wow!

  • The brisket is extremely tender, with very little fat
  • The brisket is soft and lean, and has an almost velvety texture
  • Saussage is not to hot, but with a good blend of spices. However it is a little too salty.

OTHER FARE:

  • The sauce is a light brown color, and has subtle tones of cumin

Houston Chronicle: The great state of barbecue

Yup.  That describes us pretty well!

The world of Texas barbecue is vast, populated with thousands of barbecue enterprises big and small - from venerable temples of 'cue that command national attention to unsung mom-and-pop joints that are known only to townies. And it's this enormous breadth of smoky landscape that the passionate disciples of Texas barbecue endeavor to chronicle. They're the ones who get up hours before the roosters to drive to a place they've heard has delectable brisket only one day a week. They're the ones staking out their place at the front of the line in front of a barbecue shack or trailer to ensure they get their fill before the ribs run out. And they're the ones tweeting enthusiasm, posting pictures on Facebook, checking in on foursquare and blogging about their meals, all in the name of spreading their burnt-ends-fueled barbecue love.
