Though the years, here's what I've learned:  Barbecue soothes the soul.  It's simple in philosophy and rich in tradition.  It's an art and a craft, a love and a passion.

  • Potato Salad: Like the slaw, typical but well done. Balanced flavor, but uninspiring.
  • Brisket: Firm crosscut. Thin sliced. Right bark and good smoke flavor. A very good standup brisket.
  • Coleslaw: Typical but good. Cabbagey. Good fresh taste.
  • Beans: Pintoss: Good, firm, right consistency. Flavor as average to above average.
  • Sauce: KC Masterpiece
  • Sausage: Tough casing. Good texture but too monolithic. Flavor OK.
  • Beef Rib: Good. Bark a bit soft - may have been aggressively mopped.
  • Atmosphere: There is way too much capital invested here to be a real joint. Good dead animals. Gas-fired mesquite pits. Family-style. But signs for weddings, flowers, and fajitas detract from the mission
  • Spare Rib: Firm and clean. Thinner bark and lower smoke. Slightly sticking to bone but pretty good.
  • Dessert: Peach cobbler: peaches a bit soft but great heterogeneous texture. Second bite had a great peach but less flavor.

Cherry cobbler: melts in your mouth. Great strong flavor and good flaky crust.
