Weighted Overall
- Pulled Pork: I got it last and it had dried out by then.
- Atmosphere: 'NOW THIS DOES NOT LOOK LIKE A JOINT.' At the end of a strip mall. A gas-fired hell-hole. But (Wildman, 'they have cold beer here, so fuck St. Arnolds.'
- Brisket: Lean and firm. Bland - not much smoke flavor. A tad tough.
- Potato Salad: Great chunk - new potatoes. Touch of dill, but not overpowering.
- Beans: Pintos: Texture perfect, rich flavor; could have more bite.
- Coleslaw: Good leaf, but a touch dry. Basically, shredded cabbage.
- Sausage: Great taste - some herb (sage?) in it. Chunky.
- Spare Rib: OK. Clean pull, but a bit tough. Some burn thru - a tad overcooked. Good flavor on meat, though.
