Smoke is mysterious, fire is uncertain, and pit men are expensive. So the mystery, uncertainty, and expense of taking the chance to make great barbecue is being replaced by the quantifiable methods of always making pretty good 'cue.

Weighted Overall
- Sauce: Spagetti sauce.
- Brisket: Super! Salty rub. Absolutely splendid!!
Best Brisket of the trip! - Atmosphere: Pits at the front, Portable pits. Converted gas station. Have to eat on a few benches outside.
- Sausage: Coarse, meaty, super flavor, an Award candidate for sure!
- Potato Salad: Too sweet and bitter at the same time.
- Spare Rib: Good Rub flavor, meaty, tough to chew however.
- Coleslaw: Crunchy and fresh tasting.
- Beans: Firm pinto beans, but bland.
- Sides: German Potato Salad - Butter boiled potato mix.
Not recommended. - Overall: Great Meats. I bet the ribs are better earlier in the day.
Also, fudge brownie was great, but I'll pass on the coconut cream pie.
