Weighted Overall
- Sausage: Buttery inside with a semi-tough casing, not enough spice.
- Dessert: Excellent!! Nice capper to the tour.
- Sauce: OK.
- Sides: Nothing special, just passable.
- Hot Link: Excellent flavor, texture and casing blends in nicely with the meat.
- Spare Rib: Pecan wood smoked with spicy exterior – different, but I don’t like it as well as the hickory based.
- Brisket: Nice crunchy exterior with a velvety inside but it is somewhat dry.
- Atmosphere: License plates on the wall and Michael age 7 loves the BBQ. US Route 66 sign, Clint Eastwood, Liv2Ryd Harley plate, old picture of Texas as part of the Louisiana Purchase. Stuffed animals in the middle is a little too much marketing for me. But wow this wait staff rocks – great looking, Longhorns, and extremely friendly. They let us in after hours.
- Bologna: Excellent flavors on this hunk a bologna.
