I think it's fair to say Texas has more variations in its barbecue styles than any other state. And more disagreements about them.

Weighted Overall
- Brisket: Excellent texture and a good 1/8” smoke ring, nice flavor.
- Sauce: Solid BBQ sauce, nothing special but it gets the job done and is very balanced.
- Hot Link: Excellent as well.
- Spare Rib: There are green marks in the fatty exterior of the rib, kinda scary.
- Sausage: Really good stuff.
- Atmosphere: Crazy – this place is a dump next to a railroad, I like it. It just seems like a joint to me. Etched window on front door that says “The Keg”. Aquarius is playing – great song that brings back some very old memories, but I’m not sure how it fits in with Q. Old-timey photos, one of the “Wild Bunch” to include “Butch” Cassidy. This guy is the king of hot sauces, he must have over a 100 in here.
