Though the years, here's what I've learned:  Barbecue soothes the soul.  It's simple in philosophy and rich in tradition.  It's an art and a craft, a love and a passion.

  • Potato Salad: Mustard base and whipped but not too much. Actually very nice.
  • Brisket: Greasy but flavorful.
  • Sauce: Pepper sauce - Watch out!! That shit will burn you out. Not a sopping sauce - this stuff could peel the paint off walls. Yow!!

Regular sauce - very thin and watered down - not good.

  • Beans: Best so far!! good marriage of brown sugar and chili powder.
  • Hot Link: Mush-like consistency with a tough casing, needs work.
  • Veal: Lots of fat, very tender with a good smokey flavor.
  • Spare Rib: They cut them all up!! I still like em though.
  • Pork Roast: Melts in your mouth, extremely tender without being greasy. Excellent job!
  • Atmosphere: We are in the middle of the 5th ward and we be the only white folk. Funky decor with a nice juke box. Orange and green decor, nice aquarium - I think it's missing something, like water and landscaping. African-American newspaper. Tile encased pits from the 50s inside the kitchen still in use - NICE! They are using both oak and hickory here.
