Weighted Overall
- Spare Rib: Falls apart. Tender & melting in my mouth. This is a VERY good rib! Even the cartilege-end keeps me coming back.
- Pulled Pork: Good moist pork. Very tender. Yum.
- Sauce: Sweet & Thick. With a vinegar tang on the finish. Good.
- Sausage: Tightly packed with a medium grind. I like it! Black pepper is present, but not overpowering. Actually, not much spice at all.
- Brisket: Another firm brisket. Mmmmm... this is good! Tender & moist, but not juicy. A little chewy on the finish, but I don't mind. Great meat/smoke balance.
- Atmosphere: Opens at 11:00 and business is heating up by 11:15. Corrugated tin exterior. Good display of dead animals on the walls. Cafeteria style serving line.
- Sides: PS is mustard-based and mashed. CS is creamy, crunchy, and good. Beans have a solid flavor in a thin sauce.
