I'm not saying that I haven't found spectacular plates of barbecue during my travels. I have. But the standouts were few and far between, and all of 'em at places that still cook exclusively with wood.

Weighted Overall
- Sauce: Mad Cow Sauce is very good -- try it!
- Brisket: Lean; very lean… but not too dry. Good finish.
- Sauce: Sweet blend; well balanced
- Atmosphere: Good little joint in Aledo, TX. Jerry is a super nice guy, and gives us a great tour! They'll have beer, margaritas, and wine by September 2001.
- Plus: 150 different hot sauces, including his own 'Mad Cow Pepper Sauce'. You gotta love it!
- Hot Link: Tough casing; good meat with mild spice on finish… very nice.
- Sausage: Bits of cartilage, but a very good sausage.
- Spare Rib: Chewy; good flavor. Flat rib - weird texture
