There's not much point in complaining about high-tech barbecue. It serves a purpose, and it's here to stay. And no doubt the quality of it will keep on improving. But as the old barbecue joints slowly disappear, each one that remains becomes a bigger treasure.

- Quotable: 'This hot sauce will grow hair on your chest.'
-- Dbl Boner - Brisket: Great meaty flavor. Mix of fatty and lean... its in between.
- Hot Link: This is GREAT! Meaty and spicy. Greasy, but good!
- Spare Rib: Solid. A little salty on the finish. Nice with the meat and fat melted together.
- Pork: Good. Tender and juicy.
- Sides: PS is mashed-style and mustard-based. Good! Beans are chili-style pintos with brown sugar. Also good.
- Veal: This is good stuff. Its piping hot. Good smoke ring with a little bit of chewy bark.
- Atmosphere: Seedy part of town, but a clean place. A/c is working. Our server is extremely nice - and helpful. Smoking with a mix of oak and hickory.
