Weighted Overall
- Brisket: Brisket is a bit dry, but good flavor. Nice smoke ring. Good meat flavor with smoke balance. Good texture (except for dryness). Breaks into chunks.
- Spare Rib: A gooey, fall-apart mess of meat and bone. This is a great, greasy rib! Can you cook a rib too long / can it be too tender?
-- That's a rhetorical question -- - Pork: Good. Good. Good. Moist & tender with good meat flavor. It's hard to go wrong with a good butt.
- Sides: PS is mustardy. I like it! CS is crunchy and good. Beans are passable/good.
- Rub: Rub is a bit salty, but not much other spice.
- Atmosphere: This is a great joint! No signs, no a/c, no indoor plumbing... just BBQ. Pits are inside.
