Weighted Overall
- Atmosphere: Well-stained ceiling, deer head on wall.
Good start! - Sauce: Good heat, thin, lots of vinegar.
- Brisket: Lean, firm, good smoke. More, please!
- Spare Rib: Good, smoky, PERFECTLY cooked! Rub just
right--not too strong or salty. - Beans: Ranch-style: Best yet! Meaty, firm, maybe a
TAD overcooked. - Sausage: Firm, dry, little grease. Good flavor.
- Coleslaw: Slaw: Slew me! Too much vinegar, too runny!
- Potato Salad: Really good! Not runny, with mayo and
mustard overtones, smooth, grassy finish, nice nose.
Or was that last night's Chardonnay? Good, in any
case!
